Black and brown Banana Cookie

I initially encountered this chewy banana cookie with brown sugar frosting in Kansas City at a little pie shop called the Upper Crust Pie Bakery.  I found them by accident and never let them go.  I would purchase them as a little treat for Sunday morning breakfast with coffee.  Now that I live in Virginia, I'm on my own and forced to figure it out for myself.  I call it a black and brown banana cookie because it has black walnuts and brown sugar frosting.  These aren't quite the same as the Upper Crust Pie Bakery, but they are still pretty delicious!  I think you'll enjoy them too!


For the Cookies

3/4 cup butter

3/4 cup brown sugar

1 teaspoon vanilla 

1 teaspoon maple syrup

1 extra large egg

2 very ripe bananas, mashed

1/4 teaspoon kosher salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 teaspoon baking soda

2 cups all purpose flour 


For the Frosting

1/3 cup brown sugar

1/4 cup salted butter

1/4 cup heavy whipping cream

1/2 teaspoon maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon kosher salt

3/4 cup powdered sugar 

1/4 cup black walnuts, crushed



Cooking Note.

Makes approximately 24 cookies when using the large cookie scoop.  Be sure to spray the cookie scoop with pan spray for easier release. 

Step-by-step instructions

For the Cookie :


Preheat oven to 350 degrees


  1. In the bowl of a stand mixer, cream butter and brown sugar on medium speed.  Add mashed bananas, eggs, and vanilla, maple syrup, and mix on medium until combined.
  2. In a separate bowl, combine salt, cinnamon, nutmeg, baking soda, and flour.  Mix with fork until combined.  
  3. Gradually add dry ingredients to the wet ingredients in the mixer bowl and mix on low speed until combined.  
  4. Drop on cookie sheet using a 1.5 Tablespoon cookie scoop, Space the dough 1 inch apart, the cookies won't spread much, but they'll need a little room. Bake for 10-12 minutes until the edges start to brown.  Some of the cookies may have little shiny bits on the top, that's okay. I wouldn't suggest baking past 12 minutes. Remove and allow to cool completely before frosting.


For the Frosting:


I suggest starting the frosting when you put the first batch of cookies in the oven.


  1. Combine and constantly stir brown sugar, butter, heavy cream, and maple syrup in a medium saucepan over medium heat until boiling.  
  2. Remove from heat and stir in vanilla and salt.
  3. Gradually mix in powdered sugar with a fork stirring continuously.  Allow frosting to cool and thicken a bit before spooning onto cookies.  
  4. Sprinkle with black walnuts.
